
- 500 g ready-made puff pastry sheets thawed
- 1 cup McCutcheon’s Preserves
- 1 egg beaten
- Googly eyes for decorating
- Pre-heat the oven to 180ºC/350ºF.
- Lightly dust a cutting board with flour then lay one sheet of pastry on the board.
- Using a pizza cutter/large knife, slice the puff pastry sheet into thin strips then set aside.
- Cut the other sheet of puff pastry into 6 equal rectangles. Place the pastry rectangles onto a baking sheet lined with parchment paper.
- Place 1-2 tablespoons of McCutcheon’s preserves in the center of each rectangle then brush the edges with egg.
- Layer a few strips over the preserves, making sure to leave space for the googly eyes (if using).
- Crimp the edges of the pie with a fork then brush the tops with beaten egg.
- Place in the oven and allow to bake for 10-15 minutes or until the pastry is golden brown and puffed.
- Remove, allow to cool to room temperature and serve.
