Cranberry Orange Salmon

Everyday in our factory store, customers tell us how they cook with our products. The other day, a lovely woman  suggested using McCutcheon’s Cranberry Orange Marmalade as a salmon glaze. What could be more simple and satisfying?

There are complicated recipes for cranberry orange salmon filets all over the internet, often requiring up to ten ingredients just to make the main course. Not only are you buying a grocery cart full of ingredients, but many of them are loaded with preservatives, food colorings, and processed foods. Here at McCutcheon’s we believe the all-natural route is the best route! All of our products are all-natural with no preservatives added. We like to cook like we like our products to be prepared, all natural! So, let’s nix the long grocery list and the processed foods for this quick and cheap version of Cranberry Orange Salmon.

Thanks to one customer we were able to bring you this recipe. We appreciate it every time someone offers us a cooking secrets. We served this meal with Grilled Green Beans with Tomatoes and Herbed Quinoa.

 

Cranberry Orange Salmon

Ingredients:

Preparation:

  1. Preheat the broiler to “High.”
  2. Place the salmon filets on a baking sheet okay to use under a broiler.
  3. Rub the salmon filets with the salt and pepper. Do not coat too heavily. Use about a tsp of salt and 1/2 tsp pepper. More if desired.
  4. Smooth the Cranberry Orange Marmalade over the tops of the salmon filets, coating evenly
  5. Place under broiler for 8-10 minutes, or until the salmon is opaque and flaky, and the marmalade has turned a golden color.
  6. Serve immediately.

Note: Different types of salmon take longer to broil. King salmon takes about 20 minutes under the broiler, Coho about 12-15 minutes, and Sockeye around 8-10 minutes. Most grocery stores carry farm-raised salmon, which can vary,  usually takes the same amount of time as wild sockeye salmon.

McCutcheon’s also makes a Juice Sweetened Cranberry Orange marmalade. Unlike our regular marmalade, it has no white sugar added. So, for all of you who watch their sugar diet, the juice sweetened offers you only fruit sugars.
